Quick Bread

Nice simple quick bread recipie to accompany chillie.

Take 1 large cup, half fill with self raising flour, top up with strong white flour if you have it, but plain flour will do.

Pour into mixing bowl and add 1/2 tsp of salt.

Add 1 tablespoon of olive oil.

Half fill your cup with warm water, mix with hands gradually adding water.

Add a little more flour if needed, once smooth dough ball is achieved place in a plastic bag wrap in tea towel and place somewhere warm for 20 mins.

Flour your work surface, roll dough ball into a sausage shape and divide into eight pieces.

Roll into thin ovals.

Lightly brush a skillet or cast iron pan with sun flour oil, place on hot stove, we cook on a wood burner but a hob will do the job, it’s just not as much fun.

Bread will bubble air pockets, generally 1 min per side dependant on heat, once done remove and re brush with oil, 2 skillets will quicken your cooking time.

Serve with chillie and rice.
