Oaks Barn Farm Field Mushroom Soup
Method
Melt 1 ½ tbl spoons of butter and 1 tbl spoon of olive oil
Add 1 chopped onion stir in until coated
Add 4 peeled and chopped potatoes
Add ¼ pint of rough cider from your recent cider making
attempt (or one glass of white wine)
Add 1.2 litres of chicken stock or vegetable stock
Add 2 cloves of garlic
Add chopped Parsley
Heat for 10mins with lid on until potatoes soften
Add to this 12 oz of Mushrooms
Return to heat stiring till mushrooms soften
Pulse blend with hand blender
Add a little Crème Fresh
Pepper and Salt to taste
Serve with home baked bread
