Calendula – The Poor Man’s Saffron – Calendula Officinalis comes under the genus Calendula, belonging to the family Asteraceae. It is known commonly as pot marigold, ruddles, common marigold, garden marigold, English marigold, or Scottish marigold.

Method
Pick the flowers in their prime and leave to dry on newspaper, remove dried petals, can then be stored in an airtight jar for later use. petals can also be used to colour salads.
