Calendula The Poor Man's Saffron

Calendula – The Poor Man’s Saffron – Calendula Officinalis comes under the genus Calendula, belonging to the family Asteraceae. It is known commonly as pot marigold, ruddles, common marigold, garden marigold, English marigold, or Scottish marigold.

Method

Pick the flowers in their prime and leave to dry on newspaper, remove dried petals, can then be stored in an airtight jar for later use. petals can also be used to colour salads.

About Calendula

It is a beautiful plant referred to as the poor man’s saffron. It is an economical substitute for Saffron. It is also used in chicken feed to get sunset yellow egg yolks.

When the extract of this flower is applied directly to the wounds, it helps to heal them as well as soothe the inflamed and damaged skin.

This flower has got antispasmodic properties and helps to control menstrual flow. The juice of Calendula flower is a remedy for constipation and liver ailments.

The Calendula flowers have been known to be used by the ancient Greeks. The Romans and the Middle Eastern civilisations for its medicinal properties. Even in India the ancient medicinal science of Ayurveda used Calendula Officinalis as a medicinal herb. It is also used as a dye for fabrics, foods and cosmetics.
